Autumn Apple Bread

Servings: Makes two 9x5-inch loaves
Ingredients:
3 cups all-purpose flour
2 cups granulated sugar
2 large eggs
1 1/4 cup vegetable shortening (cooking oil)
1 cup raisins or dried cranberries
3 large apples (Granny Smith/green preferred) peeled and chopped
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts
1 teaspoon each: salt, baking soda and cinnamon


Instructions:
Preheat oven to 350 degrees F. Grease and flour 2 9x5-inch loaf pans.
Mix oil and sugar together. Sift dry ingredients and add to first mixture. Add vanilla and remaining ingredients, mix well. Spoon into prepared loaf pans. Bake 1 hour and 15 minutes, or until a toothpick inserted in the middle comes out clean. Let cool on rack.

Note: It’s better if it sits a day before you cut it-if you can’t wait that long, can be sliced when cooled.
