Gooey Chocolate Self-Saucing Pudding

This is a recipe that has been in our family for years and it is the first thing that is requested whenever any of us kids come home. It is your traditional chocolate self-saucing pudding but the pudding is nice and crisp on the outside and gooey and fudgey in the middle and the sauce is just divine! It goes perfectly hot with cookies and cream ice-cream.


Ingredients:
Pudding:
1 cup all-purpose flour (plain flour)
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla essence or extract
2 tablespoons (1/4 stick/1 oz./28g) butter, melted
1/2 cup milk
1 tablespoon unsweetened cocoa powder

Sauce:
3/4 cup brown sugar
1 dessert spoon (2 teaspoons/10 ml) unsweetened cocoa powder
1 3/4 cups boiling water


Instructions:
For the Pudding:
Sift together the flour, baking powder and cocoa and add the sugar and salt. Add the milk, butter and vanilla and mix well. Pour into a large greased glass baking bowl or casserole dish.

For the Sauce:
Combine all sauce ingredients in a small bowl and pour over the pudding batter in the bowl. Bake pudding at 350 degrees F (180 degrees C) for 45 to 60 minutes or until a skewer inserted into the pudding comes out clean. Serve with plenty of the sauce at the bottom and a good scoop of ice cream.

Makes 6-8 servings.
