Instructions:
Place milk in a saucepan; add ground cinnamon and vanilla extract, stirring well to avoid
scorching the milk. Add uncooked white rice and cook for 1 hour while the rice absorbs the
milk.
Add dried cherries and sugar; stir until well blended.
Cool pudding in a bowl of ice water. Whip heavy cream and fold into the rice mixture. This
can be refrigerated in a covered container until ready to serve.
To serve, place pudding in stemmed dessert glasses about two-thirds of the way up. Add a layer of
fresh raspberries, cherries, strawberries or other type of berries and another layer of pudding mixture.
Finish with a dollap of whipped cream and a mint sprig.
