Danish Klejners

These Danish Klejners cookies are special for Christmas in Denmark, alot of work, but worth the time and effort.

Ingredients:
6 egg yolks
2 whole eggs
1 cup granulated sugar
1 teaspoon salt
2 tablespoons heavy cream
1 tablespoon unsalted butter, melted
4 cups all-purpose flour
1 teaspoon vanilla extract

Instructions:
Beat egg yolks, eggs, sugar and salt; add the cream, butter and enough flour to make a batter stiff enough to roll out like cookies. Cut into diamond shapes, make slit lengthwise in center and put one end through slit. Cook in deep hot fat (such as Crisco) until light brown. Cook only 6 to 8 at a time, turning with a fork or a knitting needle (My Mother used a knitting needle). Place klejners on paper towels to drain.

Makes approximately 50 Klejners.

these are super but I add about 2 teaspoons of cardomom and double the recipe.

These are a Christmas favourite in our house, but we're Germans and call them 'Ungedrehte Hosen' (roughly translated as 'twisted knickers'). We add freshly grated nutmeg to the dough, and dredge them in icing sugar before serving.
