Harvest Bread

Servings: 3 loaves
This bread is moist and healthy and very easy to make.

2 cups whole grain wheat flour
1 cup whole oat flour
1 tsp. salt
2 tsp. baking soda
5 tsp. pumpkin pie spice
3 cups granulated sugar
1 can 100% pumpkin (not pumpkin pie mix in can)
1 cup shredded carrots
1 cup oil
1/2 cup water
4 beaten eggs

Preheat oven to 350 degrees F/180 degrees C.

Put all ingredients in a large mixing bowl and by hand, stir until mixture is well combined. NOTE: Do not use an electric mixer, it will make the bread tough.

Pour mixture into 3 greased and floured 8-inch bread pans or 16 mini individual bread pans.

Bake bread in preheated oven for 60 minutes. If top of bread is getting too brown cover pans with aluminum foil.

Insert toothpick into center of bread to see if breads are done. Remove breads from oven and let cool for 10 minutes in pans, then remove breads from pans and cool completely on wire cooling racks.

Makes 3 regular (8-inch) loaves or 16 mini loaves.
