Grandma's Oatmeal Cookies

These are delicious oatmeal cookies that bring me back to my childhood.

Ingredients:
1 cup solid vegetable shortening (such as Crisco)
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 cups quick cooking oats
1/2 cup chopped almonds

Instructions:
Preheat oven to 350 degrees F/180 degrees C.

Cream the shortening, brown sugar, and granulated sugar. Add the eggs and vanilla extract. Sift together flour, baking soda, and salt. Add the dry ingredients to the wet. Add oats and chopped almonds. Drop dough by the teaspoonful (I use a melon baller) onto an ungreased baking sheet. Bake for 10-12 minutes.

Makes approximately 74 cookies.
