Peanut Brittle (Microwave)

Easy and quick peanut brittle done in the microwave...........

Ingredients:
1 cup peanuts, raw
1/2 cup Karo Light Syrup, or white corn syrup
1/8 tsp. salt
1 tsp. vanilla extract
1 tsp. baking soda
1 Tbls. unsalted butter

Instructions:
Mix peanuts, sugar, and karo syrup together in a large bowl, and put in microwave oven set on medium power for 7 minutes. Remove and stir in butter and vanilla. Put back in oven and cook 2 more minutes. Remove from microwave and quickly stir in baking soda, and pour into ungreased cookie sheet. Shake cookie sheet from side to side to spread brittle as thinly as possible. Let stand until cold and hard, about 2 hours. Break brittle into pieces. Store in airtight container at room temperature for up to 1 month.

how much sugar do you use? what makes it chewy instead of hard and crunchy? I used 1 cup sugar followed recipe 2 times still chewy (help please)

I have made this version since the late 80's. 1 cup sugar ½ cup WHITE Karo syrup 1/8 tsp salt

1 cup raw Spanish peanuts

1 tsp baking soda

1 tsp butter tsp vanilla

Mix first 3 ingredients in 1-1/2 quart MICROWAVEABLE bowl (use a Pyrex glass mixing bowl w/ handle) Stir Cook 4 minutes on high (650w) Add nuts Cook on 3 minutes on high (650w) Add butter and vanilla Stir Cook 2 minutes on high (650w) Add baking soda Stir until foamy and pour on lightly buttered cookie sheet

Wait ONE HOUR or until cool then break into pieces

The wattage of you microwave may be too low to use a medium setting.
