Mexican Wedding Cookies

These are really easy cookies to make and they taste great!

Ingredients:
1 cup (2 sticks/8 oz./226g) butter, softened
1/2 cup confectioners' sugar
1/4 cup brown sugar
1-2 tsp. vanilla extract
1 3/4 cups all-purpose flour

Extra confectioners' sugar, for coating cookies in

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Grease and flour 2 cookie sheets.

Using a mixer, cream the butter, sugar, and brown sugar until well blended. Next, beat in the vanilla until smooth. Gradually add the flour, making sure to beat in between adding.

Flour your fingers if necessary, and roll cookies into small balls and place on prepared cookie sheets.

Bake cookies in preheated oven for 8-12 minutes, or until cookies are fairly firm. Allow cookies to cool just enough to handle them and coat in a plate of confectioners' sugar. Enjoy!

Makes approximately 30 cookies.

They melt in your mouth, I highly recommend this recipe. We put chocolate in the center without the powdered sugar and they were amazing, thank you so much for this recipe!
