Maplesquirrel's Oat Muffins

I made up this recipe yesterday. My family wanted some healthy, but of course delicious muffins to snack on! I have always loved the flavor of maple, so I took a basic recipe, and changed it to my liking. The result came out wonderful! My family said they were some of the best muffins they ever had! I go by the nick name "Maplesquirrel" hence the name of the muffins!

Ingredients:
3 cups all-purpose flour
1 cup wheat flour
1 cup packed brown sugar
2 tablespoons wheat germ
1 teaspoon baking soda
4 teaspoons baking powder
1 teaspoon salt
1 cup oats
1 cup evaporated milk
1 cup oil
1 cup maple syrup
1/2 teaspoon mapleine OR maple flavoring or extract
2 tablespoons mayonnaise
2 tablespoons applesauce
2 eggs
2 teaspoons vanilla extract

Topping:
1/2 cup wheat flour
1 cup all-purpose flour
2 tablespoons wheat germ
3/4 cup packed brown sugar
1 cup chopped walnuts
1 1/2 teaspoons ground cinnamon
2 tablespoons almond meal (optional)
1/2 cup (1 stick/4 oz./113g) softened butter

Instructions:
In large bowl, combine flour, brown sugar, baking powder, baking soda, salt, wheat germ and oats.

In another bowl, combine evaporated milk, oil, maple syrup, mapleine, mayonnaise, apple sauce, eggs, and vanilla.

In yet another bowl, sift together flour, wheat germ, brown sugar, walnuts, cinnamon and almond meal. Cut in softened butter, until crumbly.

Combine dry and wet ingredients, and stir only a couple times, until combined (don't over-mix!)

Fill muffin pans about 3/4 full for each cup. Sprinkle generously with crumb topping. Bake at 400 degrees F/200 degrees C for about 20 minutes, or until toothpick comes out clean. Let cool for a couple minutes before removing from pan onto wire racks.

Makes 24 muffins.
