This is a delicious, moist, and spicy pudding. It is technically a pudding, but bakes up similar to a cake. It's easy to whip up, and bake for a last minute dessert. Served warm with a drizzle of whipping cream is heavenly!

Ingredients:
1 cup soft white bread crumbs, firmly packed
1 cup buttermilk
1/4 cup half and half (Half and Half is half milk and half cream here in the US)
1/4 cup (1/2 stick/2 oz./56g) softened butter
3/4 cup brown sugar
2 tablespoons molasses
2 teaspoons vanilla extract
1/2 cup all-purpose flour + 2 tablespoons
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/3 cup chopped walnuts
3/4 cup raisins

Instructions:
Combine the bread crumbs, buttermilk and half and half. In separate bowl, cream butter, brown sugar, molasses and vanilla. Combine bread crumb and sugar mixtures. In separate bowl, sift together flour, salt, baking soda, cinnamon, cloves, nutmeg, and allspice. Cream together wet and dry ingredients until well blended and creamy. Add chopped walnuts and raisins, stirring until well distributed. Pour into well greased 10-inch round casserole dish. Bake at 350 degrees F/180 degrees C for 30 to 45 minutes, until toothpick inserted in middle comes out clean.

Makes 8 servings.
