Chocolate Chip Mondel Bread

What is Mondel Bread?

Mandelbrot (or Mandel Brodt, or Mondel Bread) literally means almond bread. It is a twice-baked cake that is similar to Italian Biscotti. Mandelbrot is a dessert associated with Eastern European Jews, although its precise origin is unknown. Although the name seems to indicate that it should be made with almonds, Mandelbrot also can be made with other ingredients. It's usually made into a loaf, and can be sliced like hard bread.

Ingredients:
3 cups all-purpose flour
1 cup vegetable oil
1 cup granuladed sugar (less, if desired)
4 large eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup chocolate chips
1/2 cup confectioners' sugar (powdered sugar or icing sugar) optional

Instructions:
Preheat oven to 350 degrees F/180 degrees C.

Combine all ingredients together (except confectioners' sugar) and knead dough with hands. Knead into two 10-inch by 3-inch loaves. Place loaves on ungreased cookie sheet (or you can line cookie sheet with parchment paper). Bake loaves in preheated oven until golden, 35 to 40 minutes. Lower oven temperature to 300 degrees F/150 degrees C. Cut loaves into slices on the diagonal into 1 1/2-inch wide cookies. Lay each cookie on it's side on cookie sheet and return to oven until golden brown (approximately 12-15 minutes). Cool for 3-5 minutes on cookie sheet, then transfer to cooling rack to cool completely. If desired, sprinkle cookies with confectioners' sugar.

Makes 2-3 dozen cookies.

Instead of using chocolate chips I used pecans and when I put them back in the oven I sprinkled it with cinnamon-sugar.
