Banana Loaf

| Ingredients: 1/2 cup (1 stick/4 oz./113g) butter, softened 1 cup granulated sugar 2 eggs, beaten 2 cups all-purpose flour 1 tsp. baking soda 3 mashed ripe bananas |
| Instructions: Preheat oven to 350 degrees F/180 degrees C. Grease two loaf pans. Cream butter and sugar. Add eggs to the creamed mixture and mix well. Add the flour and baking soda. Mix with a wooden spoon or rubber spatula. Add the mashed ripe bananas. Mix until smooth. Pour mixture into prepared loaf pans. Bake in preheated oven until a toothpick inserted in center comes out clean, approximately 40 minutes. Makes 2 small loaves. |
