Cream pie

I worked at a small hospital and made this frequently for the cafeteria.

1 small pkg. instant vanilla pudding
2 pkgs. Dream Whip whipped topping
1 3/4 cups low-fat milk
1 tsp. vanilla extract
Flaked coconut
1 small can crushed pineapple, drained
1 ready-made Graham Cracker pie crust

Whipped cream, Coolwhip or Dream Whip topping
Flaked coconut

Place all ingredients in a large mixing bowl and mix with an electric mixer on LOW/MEDIUM speed until mixture starts to form peaks, then whip on HIGH until stiff. Mix in coconut and drained crushed pineapple. Place in a prepared graham cracker crust. Top with whipped topping and flaked coconut.

Makes 8 servings.
