Melting Moments

These are luscious!

Ingredients:
3 tablespoons butter
5 tablespoons lard or vegetable shortening
1/2 cup granulated sugar
1/2 egg, beaten
A few drops of almond or vanilla extract
1 1/4 cups of self-rising flour
Rolled oats for coating the cookies in
10 candied or Glace cherries, halved

Instructions:
Preheat oven to 350 degrees F (180 C). Grease one or two cookie sheets. Set aside.

In a large mixing bowl, cream butter with sugar and shortening. Add in egg, almond or vanilla extract, or use both. Stir in the flour, and shape dough into little balls. Roll balls in rolled oats. Flatten each cookie just a little bit with the back of a spoon. Place one half candied cherry in the middle of each cookie and place on prepared cookie sheet. Bake in preheated oven for 15-20 minutes or until lightly browned. Remove from oven and let cookies cool in pan for a few minutes, then place cookies on wire rack to cool completely.

Makes 16-20 cookies.

I baked these for my kids recently, and they turned out fabulous. The cookies are rich in taste and aroma. Once you start eating the cookies, they can be very addictive! Thanks Diana for sharing this recipe. I have been and will continue to be your fan.
