Earthquake Cake

My mother loved making this cake although she could not eat any of it because she is a Diabetic and cannot have anything sweet.

Ingredients:
1 1/2 cups flaked coconut
1 cup chopped pecans
1 box German Chocolate Cake Mix
1 stick (8 tbsp./4 oz/1/2 cup/113g) margarine
1 lb. (16 ounces/453g) powdered sugar
1 (8oz/226g) package cream cheese, softened

Instructions:
Prehat oven to 350 degrees F (180 C). Grease and flour a 9 x 13-inch baking pan.

Sprinkle coconut and pecans over bottom of prepared baking pan. Prepare cake mix (but do not bake yet) according to directions on package and spread cake batter over coconut and pecans in baking pan. Melt margarine; add sugar and cream cheese. Mix well and spread over cake and spread as evenly as possible. Bake cake in preheated oven at 350 degrees F (180 C) for 45-50 minutes.

Makes 12 servings.

We have a lot of potlucks in our camping club, and I'm always on the look-out for something to WOW the club. This is a winner! An empty pan is the best sign of success, and mine was empty. They even scraped the pan. I stumbled onto this website by accident, and I'm soooo glad I did. It's in my favorites, and I use it all the time. Thanks

P.S. This cake is not supposed to look "Pretty", it is supposed to look like an "earthquake". If it turns out "pretty", you didnt do it correct. Just letting Anna know that this is EXACTLY what this cake should taste and look like. I love it and have had NO complaints yet!!

I forgot to add that I like to tweek recipes, as we all do. When I took the cake out of the oven, I sprinkled some chocolate chips on top (for us choco-holics). It was awesome!!

I could only find Devil's food cake as the closet to the German choc. but it along with using plain white sugar (1 cup) made this really good! My husband's "new favorite dessert."
