Apple Squares

This dessert is wonderful served warm with vanilla ice cream or whipped topping. It is a favorite every fall, when our neighborhood has its annual stew supper.

Ingredients:
1 cup canola oil
2 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
3 cups peeled and thinly sliced apples
1 cup chopped pecans

Instructions:
Preheat oven to 350 degrees F (180 C). Grease and flour a 9 x 13-inch baking pan.

Blend oil, sugar, eggs, and vanilla in a large bowl.

In a separate bowl, sift together flour, salt, baking powder, and cinnamon.

Blend half of the flour mixture into the oil mixture. Toss the peeled and sliced apples and chopped pecans with the other half of the flour mixture until coated. Combine both mixtures by stirring.

Note:
Batter will be very thick. Spread evenly into prepared baking pan. Bake in preheated oven until golden brown, about 30-45 minutes.

Makes about 15 servings.

This recipe is so yummy, I made it for a baking contest and everyone loved it! It is delicious with or without ice cream but definitely warmed up in the microwave!
