Evaporated Milk Cake

Comments:
A friend of mine made this cake and everyone just loved it. It's very good served any time of the year.

Ingredients:
1 cup (8 oz./2 sticks) unsalted butter
3 cups granulated sugar
6 large eggs
3 cups sifted all-purpose flour
1/4 tsp. salt
1 cup evaporated milk
1/2 tsp. vanilla extract
1 cup chopped nuts

Instructions:
Cream together the butter and sugar, adding eggs one at a time to mixture. Sift together the flour and salt. Add 1/4 cup flour and 1/8 cup milk to the mixture; then continue adding flour and milk alternately until all has been added to batter. Add vanilla and chopped nuts. Pour into greased and floured 9-inch tube pan. Place in cold oven and bake at 325 degrees F (160 C) for 1 1/2 hours.

Makes one 9-inch tube cake, 12 servings.

Icing

Ingredients:
1/4 pound (1 stick/4 oz.) butter
8 oz. cream cheese, softened
1 box (16 oz.) confectioners' sugar
1/4 tsp. vanilla extract


Instructions:
Have all ingredients at room temperature. Mix well and spread on cooled cake.

Cake turned out very well. The only thing is that I added 1 tsp baking powder as I wasn't sure if not adding will rise the cake. On the whole all the ingredients are in perfect ratio. Thanks

Followed this recipe exactly. Just ate the first piece. Was sweet and quite heavy. Do like the custard taste from all the eggs. Prefer lighter cake so when I eat a slice I don't feel like I ate the whole cake. :)
