My good frined Pat Volchuk gave me this wonderful recipe. This one will melt in your mouth. In my 62 years I have never tasted a finer lemon bar...these will disappear quickly.

Lucy Bars
I hosted my first holiday cookie exchange in 1980. It was a great way for "young moms to meet, share cookies and gather lifetime recipes. My son Milo, age two at the time, loved these bars and renamed them "Lucy Bars" because he could not say "lemon". "Lucy's they have remained!

Ingredients:
1 cup all-purpose flour
1/2 cup butter
1/3 cup confectioners' sugar
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
3 tbsp. "Lucy" (lemon) juice
2 tsp. finely shredded "Lucy" (lemon) peel
Confectioners' sugar for dusting (optional)

Instructions:
Preheat oven to 350 degrees F (180 C).

For the Crust:
Cream the flour, butter, and the 1/3 cup of confectioners' sugar in a medium mixing bowl. Press the mixture into the bottom of an ungreased 8 x 8 x 2-inch pan. Bake in a preheated 350 degree F (180 C) oven for 15-20 minutes.

Meanwhile, To Make the "Lucy" (the lemon filling):
Beat the eggs until foamy, then add the granulated sugar, baking powder, salt and "Lucy" juice. Beat for about 3 minutes until slightly thickened. Fold in the "Lucy" peel. Pour onto the hot crust and bake an additional 25-30 minutes, until brown around the edge and center firm. Keep in pan to cool on a wire rack. Cut into 2-inch square bars and dust with confectioners' sugar (optional). Store, covered, in refrigerator.

Makes 16 "Lucy" bars.

Ended up a unnaturally bright yellow colour. Tasted acceptable, but didn't make me crave any more. Wouldn't recommend.
