Sunshine Cake

Ingredients:
For Cake:
1 box yellow cake mix (with pudding in the mix)* See note below
1 small can mandarin oranges

For Frosting:
12 oz. container Cool Whip (or any other frozen non-dairy whipped topping, thawed)
1 small can crushed pineapple
1 box french vanilla pudding mix (5 oz. size)

Garnish:
Fresh strawberries and blueberries, (kiwi is good too)

Instructions:
1). Mix cake mix according to instructions for making a 9 x 13-inch cake. Fold in mandarin oranges with juice.

*Note from Diana's Desserts:
You will probably need water, vegetable oil and eggs to add to the cake mix. Amounts of these ingredients will be on the back of cake mix box.

2). Bake cake in a 9 x 13-inch baking pan at 350 degrees F (180 C). Approximate baking times vary on individual oven, between 35-45 minutes. I always go by when cake springs back when touched.

3). Cool cake completely before frosting.

4). For Frosting:
Mix thawed non-dairy whipped topping, drained crushed pineapple, and box of french vanilla pudding (straight from box). Mix well. Frost cake. Decorate with fresh strawberries and blueberries. Also good with kiwi. Slice into squares. Store any leftovers tightly covered in refrigerator.

Makes 20 servings.

I love to make this cake during the summers for a nice, cool finish to a bbq with friends! Simple, delicious.
