Black Walnut Apple Cake

Comments: This is one of the best cakes that I have baked. Everyone that has eaten a slice wants the recipe. |
Ingredients: For the Cake: 3 eggs 1 1/2 cups vegetable oil 2 cups granulated sugar 2 1/2 cups self-rising flour 3 medium apples, peeled, cored, and chopped (I like Granny Smith apples) 1 cup black walnuts, chopped 2 tsp. ground nutmeg For the Topping: 1/2 stick (2 oz./1/4 cup) margarine 1/2 cup brown sugar, packed 1/3 cup milk |
Instructions: For the Cake: Grease and flour a 10-inch (25cm-26cm) tube or bundt pan and preheat oven to 350 degrees F (180 C). Blend eggs, oil, nutmeg, and sugar until creamy. Add flour, a little at a time; blend well. Batter will be stiff. Fold in apples and nuts. Pour batter into prepared tube or bundt pan and bake in preheated 350 degree F (180 C) oven for 1 hour or until done. Transfer cake (in pan) to cooling rack; cool for about 30 minutes; then invert cake onto cake plate or serving plate. Punch holes in top of cake. For the Topping: Mix together topping ingredients in a saucepan. Boil for three minutes, stirring frequently. Take off the heat and pour topping over cake with a spoon, letting it to seep into the cake holes. Brush sides of the cake with the topping with a pastry brush. Let it set for at least 24 hours befor you cut the cake. Makes 12 servings. |
