Mashed Potato Doughnuts

I have a hard time keeping up with the demand for these during the hoildays or whenever I make them.

Ingredients:
1 cup mashed potatoes
1 cup sugar
2 Tbls. shortening, melted
2 eggs, well beaten
1/2 cup evaporated milk
1/2 cup water
1 tsp. vanilla
1/2 tsp. salt
4 tsp. baking powder
1/2 tsp. nutmeg or other spice
1 cup all-purpose flour (and some extra if needed to make a soft dough)

Instructions:
Combine mashed potatoes, sugar, shortening, eggs, milk, water, and vanilla in large bowl.

Sift 1 cup flour with salt, baking powder, and nutmeg.

Add flour mixture to potato mixture and mix thoroughly. Add enough flour to make a soft dough.

Turn dough out onto well floured surface. Knead more flour into dough if needed. Roll dough out to 1/4 inch thick. Cut doughnuts with floured doughnut cutter.

Fry doughnuts in deep fryer or deep frying pan in at least 2-3 inches of oil at 365 degrees F, about 2 minutes or until golden brown. Drain on crumpled absorbent paper.

Yield: 40-45 doughnut
