Gingerbread

Ingredients: 2 oz. (50 g) dark molasses, or black treacle 2 oz. (50 g) light corn syrup, or golden syrup 4 oz. (100 g) butter or margarine 4 oz. (100 g) brown sugar 6 oz. (175 g) all-purpose flour 1 tsp. baking soda 1 tbsp. ground ginger 1 egg, beaten 1/4 pint (150 ml) milk Confectioners' sugar-optional |
Instructions: Pre-heat the oven to 350 degrees F (180C). Grease and line with parchment paper a 9x5 inch (900 g) loaf pan. Heat the molasses, syrup, butter and sugar in a small saucepan until melted. Bring to the boil and remove from the heat. Mix flour, baking soda and ground ginger in a large bowl and gradually stir in the syrup mixture, egg and milk, stirring well to form a batter. Pour into the loaf pan and bake for 1 hour or until cooked throughout. Allow to cool before removing from the pan. Dust top with confectioners' sugar (optional). Makes: 8 servings. |
