Apple and Oatmeal Cupcakes

After lots of unhealthy eating i wanted to make something yummy but healthy so after going through my mom's old recipe books and using my own head i came up with these.


Ingredients:
1 cup sifted whole wheat flour
1/2 tsp. baking powder
1 tsp. ground cinnamon
1/2 cup to 1 cup brown sugar
1/2 tsp. vanilla extract or vanilla essence
1 egg
1/2 cup butter
1/2 cup oats
1/2 cup milk
1/2 cup finely chopped granny smith apples


Instructions:
Preheat oven to 180 degrees C/350 degrees F.

Combine oats and milk and let stand.

Mix flour, baking powder, cinnamon and sugar in a bowl.

Melt butter. Add melted butter, egg, vanilla and apples to oat mix, then stir together and pour into flour mix,
mix well with spoon until shiny.

Pour batter into muffin liners until liners are 1/2 to 3/4 full. Bake in preheated oven for 20-25 minutes.

Makes approximately 12 muffins.
