Pumpkin Spice Cake

Easiest cake I have ever made and so delicious. Great for a holiday dessert or anytime of the year.

Ingredients:
For the Cake:
1 Spice Cake Mix
1 (15 or 16 oz.) can 100% pure pumpkin (not pumpkin pie filling)
3 eggs
1/4 cup soft margarine or butter

For the Frosting:
1 Can Cream Cheese frosting
Pecans
Ice Cream Caramel topping

Garnish (optional):
Pecans

Instructions:
Put spice cake mix, pumpkin, eggs, and butter (or margarine, if using) in a large mixing bowl. Stir well. Mix for 2 minutes. Pour batter into a 9" x 13" cake pan and bake at 350 degrees F (180 degrees C) for 32 to 35 minutes or until toothpick test comes out clean.

When cool, frost cake with cream cheese frosting. Drizzle with caramel topping. Add pecans to each piece (you can chop the pecans and spread them over the frosting or place in half pieces on each serving of cake.)

Makes 12 good size pieces.
