Apple Cinnamon Bread

Comments:
Something a bit different, and especially pretty if baked in mini bundt pans. Serving them individually is lovely if you're having guests. This quick bread freezes well also.

Ingredients:
2 cups whole-wheat pastry flour
or all-purpose white flour
2 teaspoons baking powder
2 teaspoons ground cinnamon*(see note below)
1 teaspoon salt
2 large eggs, beaten
1/2 cup brown sugar
1/2 cup vegetable oil
3 medium-size tart apple (such as Granny Smith's) peeled and cut into 1/2-inch cubes
1/2 cup raisins and/or 1/2 cup unsalted mixed nuts, Optional


Instructions:
Preheat the oven to 350 degrees F. Grease a 8 1/2x4 1/2-inch loaf pan or 6 mini bundt pans.

Sift together the flour, baking powder, cinnamon, and salt; set aside. Combine the remaining ingredients and blend thoroughly. Add the liquid ingredients to the dry ingredients and combine just until blended thoroughly (do not beat). Pour into the prepared pan(s).

Bake the loaf pan for 80 minutes, the mini bundt pans for 60 minutes, or until a tester inserted in the loaves comes out clean. Cool on a rack for 10 minutes before removing from the pans.

If desired, serve with Clotted or Double Cream, Creme Fraiche, or with a little Apple Butter on the side.

*Note
You can substitute ground ginger for the ground cinnamon in this recipe, if desired.

Some indredient must be missing....this batter was as dry as a bone. I added 1/2 cup milk but it needed more sugar. I asked 6 co-workers to give me a critique and each said it was lacking. Perhaps add 1/2 cup granulated sugar or increase the brown sugar to 1 cup. Also, I added 3 tablespoons of sugar to apple-ciinnamon mixture which didn't help much. Orange juice could also have been added instead of milk. What have you heard from others?

I agree with Kathy. I tried adding a little bit of butter for some taste as well as some milk and sugar and it still didnt do much. I added exactly 3 Tablespoons full of sugar along with the brown sugar and nothing worked. I think if you used a little less flour and or more wet ingredients, it would be better and adding some sugar and milk as well.

Oh my goodness, this took forever to bake and it was terrible. Dry like the others said!!!!! Waist of time!!!
