Chocolate Cheesecake with Orange Liqueur

Ingredients:
1/3 cup unsalted butter, melted
1 1/4 cups graham cracker crumbs,
or chocolate wafer cookie crumbs
3/4 cup sugar
2 teaspoons finely grated orange peel
2 tablespoons orange flavored liqueur, such as Grand Marnier
1 envelope of unflavoured gelatin
2/3 cup water
2 8oz. packages of cream cheese, softened
4 ounces of semi-sweet chocolate, melted
1 14 oz. can of sweetened condensed milk
1 teaspoon vanilla extract
1 cup (1/2 pint) whipping cream, whipped

For Garnish-Optional
Whipped Cream
Orange Peel Curls
Mint Sprigs

Instructions:
Combine the melted butter, the graham cracker crumbs (or chocolate wafer crumbs), and sugar. Pat firmly on the bottom only of a 9-inch springform pan. Chill for 30 minutes.

In a small saucepan, soften the gelatin in the water. Over low heat, dissolve the gelatin completely and set aside.

In a large mixing bowl, beat the cream cheese and melted chocolate until it becomes fluffy. Add condensed
milk, the vanilla and the orange liqueur and beat until smooth. Stir in the orange zest and the gelatin mixture. Fold in the whipped cream (make sure you
fold in the whipped cream, beating it will make the cheesecake lose it's texture). Pour into the prepared crust.
Chill for at least three hours, until set.

When ready to serve, garnish each slice with orange peel curls, a dollap of whipped cream and a mint sprig. Store any leftovers in refrigerater.

This is a lovely dessert. Husband loves it even though he is not a chocolate lover. I cut down on condensed milk though. I also put gelatin in milk instead of water. The result is a more milky and not so sweet version. Personally I prefer the cheesecake to be sweeter but family members are not sweet dessert fans.
