Coconut Bon-Bons

Servings: Makes 24 bons bons
 
Ingredients:
3/4 cup light corn syrup
2 1/2 cups shredded sweetened coconut
1 (12 oz.) bag chocolate chips (either semi-sweet or dark chocolate chips)

Instructions:
In a small saucepan heat corn syrup until very hot, but not to a boil. Remove from heat and add coconut. Stir and allow to set for 2 hours. Meanwhile melt chocolate chips in double broiler. Roll corn syrup/coconut mixture into balls. Dip in melted chocolate chips. Allow to set for about an hour.

Variations:
You can also add chopped candied cherries or chopped nuts.

Makes 24 bon bons.
