Oatmeal Raisin Cookies

Comments:
Have one of these delicious cookies for a snack during the day. Great for a diabetic or for anyone on a low carb diet.

Ingredients:
1/2 cup (1 stick/4 oz/113g) butter, softened
3/4 cup Equal® Sugar Lite™
1 egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1-1/2 cups uncooked quick or old-fashioned oats
3/4 cup golden raisins* (See Note)

Note:
May substitute dried tart cherries or blueberries for the raisins.

Instructions:
Preheat oven to 350°F (180°C).

Beat butter and Equal® Sugar Lite™ until well combined. Beat in egg and vanilla until blended. Mix in combined flour, baking soda, cinnamon and salt until blended. Stir in oats and raisins just until combined. Shape dough into 1-inch balls. Place on ungreased baking sheets about 2-inches apart. Flatten slightly with fingers. Bake in preheated 350°F (180°C) oven 10 to 12 minutes or until light golden. Cool slightly on cookie sheet. Remove and cool completely on wire rack. Store in tightly covered container at room temperature.

Makes 3 dozen cookies.

Cooking Tip
When using Equal no-calorie sweetener, use recipes designed for Equal or maintain sweetness by adding Equal after removing the dish from heat. Prolonged cooking at high heat levels may result in some loss of sweetness.

These cookies were delicious and so quick to make. I modified the recipe a little by using splenda brown sugar and whole wheat flour so they were just that much healthier! Delicious, soft and moist. My husband who has Type 2 diabetes siad they were phenomenal. I will definitely use this recipe again!
