Pennsylvania Dutch Apple Cobbler with Cream Cheese

This is so good. Apple season is here. I like using Granny Smith apples for cooking and baking.

Ingredients:
Apple Layer:
8 Granny Smith apples
1 cup granulated sugar
1 tablespoon ground cinnamon

Crunchy Baked Topping:
1/2 cup brown sugar
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon

Cobbler Layer:
1/2 cup butter
1 cup brown sugar
2 eggs
2 cups self-rising flour
1 cup sour cream
2 tablespoons rum flavoring

Cream Cheese Topping:
8 oz. cream cheese
1 cup heavy cream
1 teaspoon vanilla extract
1/2 to 1 cup granulated sugar

Instructions:
Preheat oven to 400°F (200°C).

Peel and slice apples. Spread sliced apples in a 9 x 11-inch glass casserole dish. Sprinkle sugar and cinnamon over apples. Cover with aluminum foil and bake for 15 minutes while you prepare the rest of the cobbler.

Mix together ingredients for Crunchy Baked Topping.

For Cobbler Layer:
Soften butter and mix with sugar with electric mixer. Add eggs and mix. Add remaining ingredients to cobbler batter. Dollop batter over hot apples. Sprinkle with crunchy topping mixture. Bake about 30 to 40 minutes. Cobbler is done when cake part is brown and firm.

Cream Cheese Topping:
Combine cream cheese topping ingredients and whip until light and fluffy. Top each serving of warm cobbler with Cream Cheese Topping.

Cobbler makes 8 servings.
