My family loves these muffins. Use over-ripe bananas. I freeze the bananas until I have enough to make muffins.

Ingredients:
1/2 cup butter or margarine (preferably unsalted)
1 cup granulated sugar
2 eggs
1 1/2 cups mashed bananas (3 to 4 medium-large bananas)
1 tbsp. lwmon juice + 1/3 cup yogurt
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/3 cup mini chocolate chips

Instructions:
Preheat oven to 350 degrees F (180 C).

Cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in mashed bananas, lemon juice, and yogurt. Mix together flour, soda, salt and cinnamon. Blend into creamed mixture. Stir in chocolate chips. Spoon into 24 muffin cups. Bake for 15 to 20 minutes. Let cool in pan for 5 minutes.

Makes about 24 muffins.

These are excellent! Moist and full of flavor, rich and delicious, and very easy to make. Highly recommended. I'm going to make these again and again.
