Banana Crumb Muffins

This recipe yields the most fragrant and delicious crumb topped muffins your pat of butter will ever glaze!

Ingredients:
1 1/2 cups self-rising flour
3 bananas, mashed
3/4 cup white (granulated) sugar
1 egg, slightly beaten
1/3 cup butter, melted
1/3 cup brown sugar
1/8 cup all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Instructions:
Preheat oven to 375 degrees F (190 C). Grease 10 muffin cups.

Beat together bananas, white (granulated) sugar, egg and melted butter. Add the 1 1/2 cups self-rising flour. Mix just until combined; do not over mix or muffins will be tough.

Combine the last four ingredients with fork until crumbly. Sprinkle over muffins. Bake muffins for 18-20 minutes.

Enjoy!

Makes 10 muffins.

The muffins where amazing Diana. they came out as you had promised. U just forgot the baking powder. So please do add it on. Great baking. And let me add that i'm an avid reader and maker of your recipes and every one at home just loves them.

Sooo good! I added 1/2 cup of chopped walnuts to the batter. For the topping,I added 2 teaspoons cinnamon and 1 tablespoon unsweetened coconut flakes. Wow... A tropical delight!
