Pumpkin Muffins

Servings: Makes 1 dozen
 
Ingredients:
1 1/4 cups whole-wheat blend flour
1/4 cup oat bran
3/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins, or dried cranberries (Craisins)
1 cup cooked pumpkin
1 large egg
1/4 cup oil
2/3 cup nonfat plain yogurt

Instructions:
Preheat oven to 400 degrees F.

In large bowl, combine dry ingredients along with raisins or dried cranberries. Stir to mix well. Add remaining ingredients; stir just to combine.

Spoon batter into paper lined muffin tin, or non-stick muffin tin and bake for 25 minutes or until tops spring back when lightly pressed. Cool muffins in tin on a wire rack for 10 minutes, then remove muffins from tin to cool completely on rack.

Makes 1 dozen muffins.
