Leckerli Bars (Spiced Swiss Bars)

Comments: This is an old recipe for spicy bars originally from Basel, Switzerland. It is a great winter treat accompanied with a cup of coffee or fruit flavored tea. |
Ingredients: 1 1/2 cups whole grain flour 1 1/2 cups all-purpose flour 1/2 tsp. baking powder 200g honey (heated just a little) 60g butter (cut into slices) 75g brown sugar 50g slivered almonds 1 tsp. orange zest 1 tsp. lemon zest 1/2 tsp. ground ginger 1/2 tsp. ground cloves 1/2 tsp. ground nutmeg 1 tsp. ground cinnamon |
Instructions: Sift flours and baking powder into large bowl. Add sugar and spices and stir well. Add slivered almonds, orange zest, lemon zest and honey (previously a bit heated). Add butter (which has been cut in slices). Make smooth dough and leave it in a cool place for at least 2 hours or overnight. Heat oven to 180 degrees C (350 F). Leave cooled dough for 30 minutes at room temperature. Redo dough and roll it on floured surface to 1/4 inch thickness. Place dough into greased rectangle baking pan. Bake in preheated oven on 180 degrees C (350 F) for 15-20 minutes. Cut cake into bars while still warm. Makes 16-20 bars. |

dont use butter,dont use brown sugar,dont use baking power,nor wholemeal flour Use a strong bread flour,and maybe a small portion of hi ratio cake flour,only use white small granulated sugar caster,use bi carb soda,substitute butter with light corn syrup,called Basel Leckerli,or German Lebkuchen
