Fresh Fruit and Yogurt Pots

30 minutes preparation time, plus extra chilling time.

Ingredients:
150g mixed fresh or frozen berries
1 tsp. sugar
2 tbsp. orange juice
80g raspberries
80g strawberries, diced, plus extra sliced for garnish
80g cantaloupe melon, diced
250g vanilla yogurt
50g brown bread
25g soft brown sugar
Vanilla pods, to garnish

Instructions:
Place the mixed berries, sugar and orange juice into a saucepan and cook over a medium heat for about 3-5 minutes. Put aside to cool, then spoon into the base of 4 glasses. Top up each glass with layers of raspberries, diced strawberries and melon and finally the vanilla yogurt. Chill in the fridge for a least 30 minutes. Preheat the grill to hot. Roughly crumb the brown bread and mix with the soft brown sugar. Spread on a baking tray and pop under a preheated hot grill for 10-15 minutes, keeping an eye on it and stirring until the sugar has caramelised. Leave to cool until crunchy. Crumble the bread and sugar topping, and then sprinkle over the fruit and yogurt pots to serve. Garnish each pot with a sliced strawberry and piece of vanilla pod, if using.
