Arroz Doce-Portugues Rice Pudding

Comments: Rice pudding in Portugal is a celebratory dessert, served throughout the country at major events. This version, which calls for three egg yolks, is the classic. The fanciest puddings are topped with an ornate design stenciled in ground cinnamon. |
Ingredients: 4 cups (32 fl. oz-1L) milk 2/3 cup (5 oz.-155g) granulated sugar 1 tbsp. unsalted butter 1 lemon zest strip, 3 inches (7.5cm) long 1 cinnamon stick 6 cups (48 fl. oz.-1.5L) water Pinch of salt 2/3 cup (4 1/2 oz.-140g) short-grained white rice 3 egg yolks Ground cinnamon Chopped toasted almonds |
Instructions: Pour the milk into a saucepan and add sugar, butter, lemon zest strip, and cinnamon stick. Place over medium high heat and heat until small bubbles appear along the edges of the pan. Remove from the heat and let steep for 30 minutes. Meanwhile, pour the water into a saucepan and bring to a boil over high heat. Add the salt and the rice, reduce the heat to low, and cook, stirring occasionally, until tender, 15 to 20 minutes. Drain the rice. Add the rice to the milk mixture and return to low heat. Cook, stirring often, until thickened, 20 to 30 minutes. Remove from the heat and scoop out and discard the lemon zest and cinnamon stick. In a bowl, whisk the egg yolks until frothy. Whisk a half cup (4 fluid ounces/125mL) of the hot milk mixture into the egg yolks. Return the mixture to the saucepan and cook over very low heat, stirring constantly, for about five minutes. Spoon the pudding into custard cups. Sprinkle with cinnamon and almonds. Serve at room temperature or slightly chilled. Makes 6-8 servings. The very reason that I absoloutly LOVE Arroz Doce, is because I eat it almost regularly (every day) because my Aunt Angilina makes it almost all of the time, and we are preparing for her daughters, my cousins, wedding, so we're practically living off of it!

Watch out! Porportions of water/rice are way off. Need to double the rice or more for this amount of water and to get 6 servings.

It's worth to try it, just beautiful. I would like to leave some advice for Peter. You should drain the water after boiling the rice otherwise it will look like a soup.

Made this for friends, and they loved it! So much so that they took the recipe home and are making it again for more friends this weekend. You need to be brave though and go for reduction during cooking as milk seems to be a lot.

Great recipe! I am portuguese and this recipe is just like my moms. At first the rice to water ratio seemed wrong but it worked out fine. Please note that it fills 5-6 little ramekins (not 6-8 servings - unless they are really small).

P.S. This is a very sweet recipe, but the lemon and cinnamon offset it. It is sweet and delicious! Made this recipe the first time with no problems. There's a reason you use all that water in the rice. Just make sure you drain the rice before adding.

You can add or subtract rice as you like it. The water to rice ratio is correct. DRAIN THE WATER FROM THE RICE AFTER THE RICE IS COOKED ABOUT 20 MINS.
