Spiced Citrus Pikelets

Comments: I had to try these little Pikelets originating from the United Kingdom. The taste and look is something between a crumpet and a small pancake. Delicious, served with warm butter or whipped cream............Diana |
Ingredients: 1 cup self-rising flour 1 tablespoon granulated sugar 1/2 cup powdered milk, (not non-fat) 1 egg 2 teaspoons orange rind, grated 2 teaspoons lemon rind, grated 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 3/4 cup water 1 tablespoon butter, melted Unsalted butter, for greasing frying pan |
Instructions: 1. Combine flour, sugar and the powdered milk in a bowl, make a well in the center, add egg, orange and lemon rind, cinnamon, nutmeg, water and butter. Mix well until combined. 2. Drop tablespoons of mixture onto a hot greased frying pan. Turn over when bubbles appear on the surface, repeat with remaining mixture. Serve warm with butter or top with whipped cream. Makes 4 servings. |

Maybe not a fair review because I changed the recipe. I didn't have milk powder so I used yoghurt and milk, but they were very good.
