Honey Raisin Tea Bread

Servings: Makes One 2 pound loaf
 
Ingredients:
8 ounces (250g) raisins
3 ounces (75g) honey
1/2 pint (300ml) freshly made strong tea
2 large eggs, lightly beaten
10 ounces (275g) whole-wheat flour
1/2 tsp. (2.5ml) ground mixed spice
1 tbsp. (15ml) baking powder

Instructions:
Place the raisins in a bowl. Stir the honey into the tea and pour this over raisins. Leave to soak for 2 hours. Stir the eggs into the raisin mixture.

Pre-heat oven to 350 degrees F (180 degrees C). Mix the flour with the spice and baking powder then mix the dry ingredients into the raisin mixture. Transfer to a greased 2 pound, 5x10x3-inch (900g) loaf pan, and bake for about 1 hour 10 minutes.
Cook on a wire rack and serve sliced and buttered.

Makes: One 2 pound (900g) loaf.
