Lemon Mousse with Berries

Servings: Makes 6 (1/2 cup) servings
 
Comments:
Light, luscious and lemony describe this easy to prepare treat. Can be made with or without berries.

Ingredients:
For Mousse:
1 1/2 cups heavy cream
1/3 cup sugar
1/4 cup lemon juice
1 teaspoon lemon extract

For Berry Mixture:
1 12-ounce basket strawberries, hulled, halved (or quartered if large)
1 6-ounce basket fresh blueberries
1 6-ounce basket fresh raspberries
1 6-ounce basket fresh blackberries

Garnish-All Optional
8 whole strawberries
Fresh mint sprigs
Sweetened Whipped Cream

Instructions:
Toss halved strawberries, blueberries, raspberries, blackberries and 1 tablespoon sugar in another large bowl. Set aside.

Beat all lemon mousse ingredients until mixture mounds softly.

Divide berry mixture among 6 dessert bowls or wineglasses. Spoon lemon mousse over berries. (Can be prepared 1 day ahead. Cover and refrigerate.) Garnish with whipped cream, whole strawberries and mint sprigs (optional).

Makes 6 (1/2 cup) servings.
