Mama's Best Banana Bread

Ingredients: 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter 3/4 cup brown sugar 2 eggs, beaten 2 1/3 cups mashed overripe bananas 1/2 teaspoon vanilla extract 1/2 teaspoon banana flavoring |
Instructions: Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan with Crisco or butter. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture, add vanilla extract and banana flavoring, stir just to moisten. Pour batter into loaf pan. Bake in preheated oven for 60 to 65 minutes, or until a toothpick inserted into center of the bread comes out clean. Let bread cool in pan for 10 minutes, then invert onto cooling rack or plate. Serve warm, or at room temperature. A little dollop of whipped cream on the side is nice. |

This is a great recipe for using those over-ripe bananas! I crumbled dried banana chips on top and it came out delicious! Thank you (again and again!) Diana!!
