Coconut Pie

Ingredients:
9 or 10-inch pie shell, unbaked
1/4 cup finely chopped nuts (slivered almonds are best)
3 large eggs
1/2 cup water, milk, coconut milk, or orange juice
1 1/2 cups sugar
1/4 cup flour
1 1/3 cups flaked coconut
1/2 cup melted butter
1/2 teaspoon vanilla extract, or grated lemon rind

Instructions:
Sprinkle nuts over bottom of unbaked pie shell. Combine eggs, liquid used, sugar
and flour. Beat until smooth. Stir in the remaining ingredients and pour into the pie
shell. Bake in a 450 degree F oven for 10 minutes. Reduce heat to 350 degrees F,
and bake for another 25-35 minutes, or until pie is almost set. Cool on rack.

Makes 8 servings.
