Cinnamon Apple Quick Bread

Can you feel Fall in the air? Well, this delightful Cinnamon Apple Quick Bread is just perfect when the weather starts to cool down and you want a wonderful and delicious comfort food for those chilly days and evenings. If possible, serve it warm from the oven with a little butter on top. Yummy!

1/2 cup (1 stick/4 oz./113g) butter (unsalted butter, preferably), softened at room temperature
1 cup brown sugar, firmly packed
2 large eggs
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons buttermilk
1 cup grated apples (apples can also be cut into small chunks, if desired)
1 cup chopped nuts, such as pecans or walnuts, (optional)

Preheat oven to 350 degrees F/180 degrees C. Grease and lightly flour (bottom only) of a 9 x 5 x 3 inch loaf pan. Set prepared pan aside.

In a large mixing bowl with an electric mixer, cream together the butter and brown sugar. Add eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Combine the flour, baking soda, ground cinnamon and salt; add to creamed mixture alternately with the buttermilk. Stir in apples and chopped nuts (if using).

Pour batter into prepared loaf pan. Bake in preheated oven for 60-65 minutes or until a toothpick inserted near the center of loaf comes out clean. Cool loaf in pan for 10 minutes, loosen sides of loaf from pan with knife, then remove loaf from pan to wire rack to cool completely.

Makes 1 loaf, 12-16 servings.

Good bread. Fairly dry bread though. Could have used some olive oil possibly to moisten it up. Batter was almost cookie batter.

After reading the previous review, I noticed the batter was thick. I used half brown sugar, half granulated sugar and also added 1/4 cup oil, 1/4 cup of cream, no buttermilk. Added 1/4 cup of sour cream as well..also, used canned apple filling, 1 cup. Batter was like every other quick bread I make, thick, but still a bit runny. Its in the oven now. Can't wait to see how it turns out!
