The Best Apple Bread

Extremely moist and tender, just what you'd want and expect from a quick bread. You'll get many compliments on this wonderful quick bread and loads of requests for the recipe.

Ingredients:
1 cup vegetable oil
3 eggs
2 cups granulated sugar
1 tsp. vanilla extract
3 cups peeled diced or chopped apples
3 cups all-purpose flour
1 tbsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts (optional)
Sugar, for sprinkling top of bread, (optional)

Instructions:
Preheat oven to 325°F/160°C. Generously spray two 9 x 5-inch loaf pans with nonstick cooking spray.

In a large mixing bowl mix together the oil, eggs, sugar, and vanilla. Set aside.

In a medium mixing bowl, sift together the flour, cinnamon, ground nutmeg, ground cloves, baking soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and chopped nuts (nuts are optional). Spoon batter into prepared loaf pans, sprinkle sugar over top of batter (optional), and bake in preheated oven for 70 minutes. Cool 10 minutes in pans, then invert quick breads onto wire racks to cool completely.

Makes 2 (9 x 5-inch) loaves.

Delicious and moist, I added a little wheat germ in place of flour and not too sweet. I cut back a little on the sugar. Tasted better the next couple days.
