Banana Blueberry Cake

| Comments: This Banana Blueberry cake is lovely served at brunch, or with coffee or tea in the late afternoon. A scoop of vanilla ice cream or homemade custard would go nicely with it. |
| Ingredients: 1 cup mashed bananas (about 3-4 large bananas) 1/2 cup (1 stick + 1 tbsp./4 1/2 oz./125g) unsalted butter 1 tsp. vanilla extract 1 cup granulated sugar 2 large eggs, lightly beaten 3/4 cup fresh or frozen blueberries (do not thaw, if using frozen) 1/3 cup sour cream or plain yogurt 2 cups self-rising flour Confectioners' sugar |
| Instructions: Place butter, vanilla and sugar in a bowl, and beat until light and creamy. Add eggs and beat well. Fold in flour, sour cream, mashed bananas and finally blueberries. Spoon mixture into a greased 8-9 inch (22cm) round cake pan and bake in preheated 180 degree C/350 degree F degree oven for 1 hour and 10 minutes (or until toothpick inserted in center of cake comes out clean). Allow to cool in pan before turning out to serving plate. Dust top with confectioners' sugar. Serve at room temperature. Makes 6-8 servings. |
