Banana Fritters

Comments: Serve these delicious banana fritters sprinkled with confectioners' sugar and ground cinnamon, or drizzle them with maple syrup. Either way, they are wonderful. |
Ingredients: 1 cup all-purpose flour 1 tablespoon granulated sugar 1/2 teaspoon salt 1/2 teaspoon baking powder 2 large eggs 1/2 teaspoon vanilla extract 1/2 cup milk 2 tablespoons vegetable oil 6 small to medium size bananas, medium firm, cut in half lengthwise or 12 "Plantation Bananas", left whole Vegetable oil, for frying Serve with (optional): Confectioners' sugar (icing or powdered sugar) Ground cinnamon Maple syrup Fresh limes, cut into wedges |
Instructions: 1. Sift flour, sugar, salt, and baking powder in a small bowl. 2. In another bowl, whisk together the eggs, milk, vanilla extract, and the 2 tablespoons of oil. Combine liquid ingredients with the dry ingredients. Stir until all the flour is moistened. 3. Slice bananas in half lengthwise (unless using very small bananas, then leave them whole). Place bananas in bowl with batter, coat well. With tongs or fingers, drop bananas (letting excess batter from bananas drain into batter bowl) into at least 2 inches of heated (375 degree/190 degree C vegetable oil on deep frying thermometer) in a deep frying pan or a deep fryer. 4. Fry 2-3 banana halves at a time, so they don't crowd each other in pan, turning them once or twice or until golden brown while frying, about 2-3 minutes. With a slotted spoon remove fritters carefully to paper towels to drain. Sprinkle tops with confectioners' sugar and cinnamon or drizzle them with maple syrup. Accompany fritters with lime wedges so guests can squeeze over fritters. Serve immediately. *NOTE: If using very small bananas (Plantation Bananas), you don't need to slice them. Just coat them in batter and fry whole. You will have 12 fritters. Makes 12 banana fritters Serving Size: 2 fritters per person |

My husband loves banana fritters and always orders them from restaurants if they have them. I did a search online for recipes to make them, this one sounded like the ones he loved the best. I tried them last night and they were awesome, we won't be ordering at restaurants anymore, this recipe is fabulous!
