Buttercream Frosting for Cupcakes

Servings: Makes 2 1/2 cups, enough to frost 24 cupcakes

This is a perfect frosting recipe when making pretty little cupcakes. If desired, just add 1/2 cup unsweetened cocoa powder to the frosting mixture to make chocolate buttercream frosting or for cute and fun cupcakes, tint the frosting with food coloring (I recommend the paste type of food coloring) and sprinkle tops with colored sugar or jimmies.

Ingredients:
8 tablespoons (1 stick/4 oz./113g) butter, at room temperature
3 cups confectioners' (icing) sugar, sifted
3 to 5 tablespoons milk
1 teaspoon pure vanilla extract
Food coloring, if tinting frosting

Additions:
1/2 cup unsweetened cocoa powder (if making Chocolate Buttercream Frosting)

Instructions:
1. Place the butter in a large mixing bowl. Blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the confectioners' sugar, 3 tablespoons of the milk, and the vanilla.

2. Blend with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the speed to medium and beat until light and fluffy, 1 minute more. Add up to 1 tablespoon more milk if the frosting seems too stiff.

Makes 2 1/2 cups, enough to frost 24 cupcakes.

Hi Eileen,

Here's some information for storing and refrigerating Buttercream Frosting:

Storing Buttercream Icing/Frosting:

If you are not going to be using the buttercream icing right away, place it in a clean, sealable bowl. Store it in the refrigerator, but please don’t place it next to the marinating salmon, garlic, or broccoli. You do NOT want those flavors in your icing! I like to use my icing within a few days, but buttercream icing will hold in the cold refrigerator for a couple of weeks, if necessary. I often make a double batch of buttercream icing the night before I have a baking project. This way I know that I have plenty of icing, it’s fresh, and I don’t have to make it while I’m in the middle of baking the cakes. The extra icing can always be used for a batch of cupcakes. When you remove the icing from the refrigerator, you might notice that the icing has taken on a sponge-like texture. Do yourself a favor and place the icing in a bowl and mix by hand, using a back and forth, smashing motion, with a spoon or icing spatula. What you want to do is to smash the bubbles out of the icing. This extra step will help to give you the smoothest icing for a pretty top and sides of the cake. I have found that you will get an even better texture of icing if it is at room temperature before you try to do your icing.

This turned out great for me! The only difference was that I used one cup less of the powdered sugar, but it was still the best frosting I ever made at home! (probably because of the reduction in the sugar because I like mine less sweet!) I still wanted to give it 5 stars though because of its ease of use and taste for someone who might prefer a sweeter buttercream. Thank you thank you! =)

Hi Diana, Thanks for this recipe. I am very much excited to make a batch this weekend. But do you think it is okay to add gelatin powder to make it hold it's shape as frosting/fluffy icing on cupcakes? I will be bringing them to a family thing, around 2 hours away from my home and the weather in the Philippines can be very tough (hot at 35 degrees) and I am taking public utility vehicle as means of transportation. Hence, I do not have resources to carry a cooler. I know it has been years since you posted this but I really hope you will still get this. And when in the procedure must I add and how much gelatin powder? Thanks in advance.

I have tried loads of buttercream recipes. I always find them very buttery and sickly...this one is much less sickly, although I think buttercream will always be sickly due to the amount of fat (LOL). This is a good light buttercream though and less sickly than others i've tried! I am going to do two tone cakes for my daughters birthday party with the vanilla and chocolate buttercream side by side in a piping bag! My partner set me a challenge to make a vanilla cake with vanilla buttercream like a shop one we had the night before and this, he said, was very close! To those who said it was grainy, try sieving... to those who said it was sloppy, refrigerate for 20 minutes. If this doesn't help then add a little more icing sugar / less milk although I used all 5 tbsp, and was EXCELLENT to pipe with, making it exactly how the recipe says! Thank you, will try this with the chocolate now.

I loved it! I had to piece together fats, I used a little cream cheese, a little margarine and a little butter (what was in the house) to total 8 - added 1/4 tsp. butter extract to make up for the lack of butter, and added the cocoa. Better than any icing I've ever made.

I noticed that some people thought it could have been better but personally I think that they just needed to have more patience because the butter actually takes more than 30 seconds to become smooth. I loved it and so did my family.

It is awesome...I made oatmeal carrot muffins,,,threw in a spoonful of my homemade strawberry jam in the batter and thought chocolate goes with all those things so I iced them with chocolate butter icing.

I've used this recipe a few times, it always comes out fantastic! Not too sweet, not too buttery, just right. It has been perfect for decorating. I think the trick is getting the butter temperature just right, maybe that is why people have ended up with it runny.

I tried to make this buttercream frostiong. It did not work at all. It was way to lumpy. The butter was at room temperature. I sifted the confectioner's sugar. I only used a tiny amount of milk. It turned to water and had lumps in it. It wasn't good at all. It was also way to sweet. I'm never making this buttercream again.

PERFECTION! I used unsalted butter, so I added a little bit of salt to it, made a world of difference in the taste. It is now my go to recipe for BC. Crusts very nicely. During the summer months I may have to sum butter flavored shortening to help it stand up to the high heat.

The taste is very good!! But, it was a bit liquidy. I ended up using this for a cake for my mom. And it was very sugary and textury. I had to re-make it. I used 1 1/2 cups of sugar instead of 3.. The first one was just extrememly sugary. But i'm only 14 so.. maybe I did something wrong? haha.. Very tasteful though. It would be a GREAT icing for a banana cake.

The chocolate was okay with extra vanilla and powdered sugar. The vanilla kind was thin (even though I added less milk and more powdered sugar), tasted disgusting in my opinion. To improve the taste I put some raspberry jam in a pan and warmed it up with some sugar and water, I mixed about 2 cups of this to about 1 1/4 cups of the vanilla frosting. This is definitely not something I would recommend unless you added some sort of a fruit reduction sauce.
