Chocolate Oatmeal Cookies

Servings: Makes 12 cookies
 
Ingredients:
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick/4 oz./113g) unsalted butter, room temperature
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
2 tablespoons old-fashioned or steel-cut oats
1/4 cup semisweet chocolate chips
Granulated or coarse white sugar (optional)

Instructions:
Preheat oven to 350°F/180°C. Butter a large rimmed baking sheet.

Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Add the 1/2 cup sugar and vanilla; beat until blended. Add flour mixture and beat until moist clumps form. Mix in oats with spatula until evenly distributed (dough will be very firm). Add chocolate chips and knead gently to blend.

Using moistened palms, shape 1 generous tablespoon dough into ball. Place on prepared sheet; flatten to 2-inch round. Repeat with remaining dough, spacing rounds about 2 inches apart. If desired, sprinkle tops with granulated or coarse white sugar.

Bake cookies until center is slightly firm and top is cracked, about 14 minutes. Cool on sheet.

Makes 12 cookies.

Made them again, but I found them just a little too crumbly. Something you want to try to avoid with kids eating them. Is this the effect not having eggs in them?

What I forgot to report was that I had to quintuplicate (x5) the recipe, to have enough for everyone. I even got thanks from a couple of kids!

These are really really good. My family and I love them. We make them ever Thanksgiving and/or at Christmas time. My brother likes them because he loves the white suger in them. My sister loves them too, but we all still love them. We eat them all the time.
