Honey Cookies

Servings: Makes about 4 dozen cookies
 
Ingredients:
1 cup (2 sticks/8 oz/226g) butter
1 cup light brown sugar
2 eggs
6 tbsp. honey
1 tsp. vanilla extract
3 1/2 cups all-purpose flour
2 tsp. baking soda
Confectioners' sugar

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Cream butter and sugar with electric mixer and add in 2 eggs. Mix until incorporated. Add honey and vanilla; blend until smooth. Add flour and baking soda. Scraping sides of bowl down during mixing. Mix into a thick dough. Chill dough in freezer for about 2 hours. Roll into 1-inch balls and place on an ungreased cookie sheet. Bake in preheated oven for 10 minutes. Cool cookies on wire rack. Dust with confectioners' sugar.

Makes about 4 dozen cookies.
