Marie Callender's Famous Golden Cornbread

Have you ever wanted to re-create that "oh so delicious" cornbread from Marie Callender's restaurants, well here's the recipe. Serve it to your guests with the sweet honey butter on the side. Enjoy!

Ingredients:
1 1/4 cups all-purpose flour
3/4 tsp. salt
3/4 cup yellow cornmeal
1 1/4 cups milk
2 tsp. baking powder
1/4 cup shortening
1/3 cup granulated sugar
1 egg

Honey Butter:
1/2 cup (1 stick/4 oz/113g) butter, softened
1/3 cup honey

Instructions:
Preheat oven to 400°F/200°C. Combine the flour, cornmeal, baking powder, sugar and salt in a medium bowl. Add the milk, shortening and egg and mix only until all the ingredients are well combined. Pour the batter into a greased 8x8-inch pan. Bake for 25 to 30 minutes or until the top is golden brown. Let the cornbread cool slightly before slicing it with a sharp knife into 9 pieces. Serve with Honey Butter.

Makes 9 servings.

Honey Butter
With an electric mixer on high speed whip the butter and honey together until smooth and fluffy. Store any left-over honey-butter, covered with plastic wrap, in the refrigerator.

Tonight my husband loved the cornbread with the navy bean soup I made for dinner, he usually eats rye with his soup, but he tried the cornbread and went on to have 3 pieces. This will be my go to recipe from now on.

Though not an exact duplicate, this is about the closest cornbread to Marie Callender's I've found that comes out of my oven. Since I can't use sugar, I tweaked the recipe a bit by substituting 1/3 cup honey for the sugar, and 1/4 cup canola oil for the shortening. Because of the added liquids, I decreased the milk by 1/4 cup. My family loved the sweetness and the moist, light, cakey texture that Marie Callender's cornbread is famous for.

I loved it, and even won a few awards at cook offs with this recipe... But on top of following the recipe I add one can of cream corn.... Completely divine!
