Chocolate Peppermint Slice

Servings: Makes at least 10 slices
 
Ingredients:
1 1/2 cups self-rising flour
1/4 cup unsweetened cocoa powder
1/2 cup granulated or superfine baker's sugar
1/4 cup flaked coconut
1 3/4 sticks (7 oz./200g) butter, melted

Filling:
4 cups confectioners' sugar
1/2 cup heavy cream
3 1/2 tbsp. (50g) butter, melted
2 teaspoons peppermint extract, or to taste

When set:
7 oz. (200g) chocolate, melted

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Line a 8 x 11-inch (20 x 30 cm) baking pan with parchment paper.

Sift flour, cocoa and granulated sugar into a large bowl. Stir in flaked coconut. Add melted butter and stir to combine.

Press into prepared baking pan and bake for 20 minutes. Remove from oven and set aside to cool.

Sift confectioners' sugar into a bowl. Pour in cream, butter and peppermint extract. Stir to combine. Pour over cooled base and set aside.

When set pour melted chocolate over mint filling. Refrigerate to set. Cut into slices and serve.

Makes 10 or more servings.

It was great, though I did use a bit of the peppermint crisp chocolate on the chocolate melted, it was just as good and even better.

I was looking for new recipes for Christmas and I think this is a great one. I made it and crushed up peppermints and sprinkled them on top. My kids and husband loved them.

This recipe is great.I like very much the combination between chocolate and peppermint.I like this recipe with chocolate dark or with milk chocolate
