A moist and delicious pumpkin pound cake perfect to serve during the autumn and winter months. A great addition to a Halloween or Thanksgiving party menu or serve this nicely spiced cake at an afternoon tea.

1/2 cup (1 stick/4 oz/113g) butter
2/3 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 cup canned 100% pumpkin puree
2 eggs
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp. pumpkin pie spice
1 tsp. baking powder
1/2 tsp. baking soda

Preheat oven to 350°F (180 C). Beat butter and sugars until light and fluffy. Add pumpkin, eggs and vanilla; stir well. In a small bowl, stir together dry ingredients; add to pumpkin mixture and mix well. Pour into a greased 9 x 5-inch loaf pan and bake for about 45 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.

Makes 8-10 servings.

Great taste with a nice rich color. The cake was moist with just the right amount of spice. Perfect to serve at a fall tea.

and I absolutely loved it. I'm so angry at my husband right now though- he ate half of it! We loved it! Thank you so much!

Great pound cake. I had to cook it a little longer and I added some extra pumpkin. the extra pumpkin makes it a little more dense like bread pudding and it adds more flavor.

Bakes longer than recipe calls for - but other than that a delicious moist cake that tastes even better the next day.

Brought this into work and everyone flipped over it! I did have to bake it closer to an hour, but came out delicious!
